How I decided to bake muffins, I'm not really sure, but the thought came to me last night that I just hadn't had a really good muffin in a long time. After hemming and hawing for about 15 minutes over the type of muffins to make, I asked my boyfriend (I had to tear his attention away from Star Wars Episode V) what he would like. He simply stated, "Blueberry." and then went back to watching the movie. Well, blueberry muffins are a tried and true recipe, but of course I didn't have any blueberries, so I had to wait until this morning to go out and get some.
A word about the recipe, I'm a big fan of The Food Network website and whenever I have a baking or cooking need, I find myself searching through loads of awesome dishes. I decided to use a Barefoot Contessa recipe because she seems to have a fountain of good recipes flowing from her stomach and it's a good thing I did because these Blueberry Coffee Cake Muffins are amazing.
After getting the baking buzz out of my bones, I sat down and decided to get to work with a nice cup of tea. Well, several cups. I think I'm addicted to Mango Green Tea. Personally, I think plain Green Tea is disgustingly bitter and just down right awful, but the hint of mango makes it just right. Plus, tons of healthy antioxidants and stuff! I finished all of my Physics homework and then made two animated gifs and still have time to relax a bit before bed. So, while I didn't have the most eventful day, I'd say I've been pretty productive.
